Red watermelon is in abundance now in the market. Nice, sweet, red, seedless watermelon. George and I enjoy having a few slices after our dinner. So refreshing. Today, I wasnt sure what to have for lunch. Opened up the fridge and saw the last portion of the watermelon we bought a few days ago.
Ok, and so watermelon salad it would be!
Chilled red, seedless watermelon-cubed
Half cup of sweet basil leaves, roughly chopped
Some chopped garlic (I like my salad with lots of garlic)
Some chopped cilantro
Pitted kalamata olives
Salt and pepper
